- 200g Pasta
- 50g Chopped Chorizo
- 3 Slices of Halloumi
- 1 Chopped Onion
- 50g Spring Greens
- 50g Cavolo Nero
- 1 Medium Sweet Potato
- Rapeseed Oil
Dice the sweet potato and put on a baking tray with a drizzle of rapeseed oil and salt. Cook in the oven (temperature 175c fan oven or Gas mark 4). for about 15 minutes, depending on the size of the dice.
Put a pan of water on the hob to boil. Once water is boiling, add the pasta. Cook for about 9 – 12 minutes on a medium heat.
In another pan, fry the Chorizo and onion, cook for 4 minutes or until onions are soft on a medium to low heat. Add spring greens and Cavolo Nero, cook for a further 3 minutes.
Once pasta is cooked, drain and add to Chorizo and vegetable.
Fry the halloumi with a drizzle of rapeseed oil until golden brown colour on a medium heat.
Place the sweet potatoes on the bottom of the bowl. Place the pasta, chorizo and vegetable on top. Then lay the halloumi on top.
